The name ‘Bott-rytis’ is a play on the winemaker’s surname, Bott, and the oenological term ‘botrytis’ or noble rot. It is a modern sweet wine. This year all the fruit comes from Bott’s prized Csontos vineyard on the volcanic slopes of Olaszliszka. An easy-drinking sweet wine made from grapes affected by botrytis.
Bott-rytis is aged for a short time (until next May), with the emphasis on freshness. Drinking it is like experiencing spring – the scent of fresh, crisp fruit, wild honey and freshly bloomed flowers flutter around the glass even at arm’s length. The long Indian summer provided easy picking conditions for both botrytis affected and intact berries. The final wine is made from 20% botrytised fruit. After pressing with their traditional Hungarian wine press, the juice was aged in 220 litre barrels where it spent 7 months after fermentation.
